Smooth Smoothie

Avocado Smoothie

1 ripe avocado

3/4 cup orange juice

3/4 cup pineapple juice

1/2 cup frozen raspberries

Blend until smooth…enjoy


Eggplant Hoagie

1 baby eggplant

1/4 cup almond milk

bread crumbs seasoned or flour seasoned or corn meal for coating

olive oil in cast iron pan

You slice the eggplant fairly thin (baby eggplant is small, you may get 7 slices)  make your own breading…corn meal, flour, bread crumbs…or all 3 mixed with seasonings…dip eggplant into almond/soy/rice milk then dip into breading…brown (olive oil heated well) each side in cast iron pan…prepare a hoagie roll…Whole Foods has a sesame fresh baked rolls…gut out bread…spread both sides with Vegenaise, with lettuce and tomatoes, vegan cheese if you like, add 3 slices or more of eggplant, add thinly slice onions and enjoy.

Tofu Veggie Wraps

1lb extra firm Tofu (cubed)

coconut oil for browning

garlic powder

onion powder

oregano, basil, tarragon

kelp

braggs

Prepare tofu in cast iron pan.  Heat pan thoroughly on medium heat, add cubed tofu let tofu crisp up, turn until all sides are crispy.

1 package of whole wheat wraps

lettuce, washed and dried

thinly sliced tomatoes

thinly  sliced onion

vegan  cheese

olive oil to taste

vegenaise -optional

After tofu is crispy, place tofu on paper towel to remove any excess oil.  Place all ingredients proportionately on one side of wrap.  Sprinkle with olive oil and Vegenaise.  Roll wrap tucking in edges, cut in half…enjoy.
